Can’t Cook or won’t cook but love food? This Sunday Sherry Dixon will be talking to award winner and Celebrity Chef Collin Brown. If you are passionate about good food, Collin will share with us the skills needed to produce nutritious, quick and easy dishes from scratch. Don’t worry if you’ve never cooked before as Collin will also talk about his cookery classes and his food recipes which can be of easy access to you. So tune in and feast and titillate those taste buds with Sherry Dixon on Bang 103.6FM

Chef Collin Brown is on his way to becoming Jamaica’s most successful export, and his unwavering determination is testament to the fact that hard work invites excellent results. Already a world renowned Chef, he boasts a collection of celebrity fans including Kelly Rowland, who chose him to personally cater for her birthday party last year where industry executives and close friends attended. Now having launched ‘Chef Collin Brown Restaurant’ in the opulent Canary Wharf, despite not yet having officially launched he is already a nominee for the ‘Best Caribbean Restaurant’ at the Caribbean food and drink awards.

Born in Jamaica, Collin’s passion for cooking started at the tender age of 8. One Sunday the whole family made their weekly trip to church leaving Collin and his brother at home. Hungry and too impatient to wait for the family to come back to prepare dinner, Collin decided to cook himself. His brother became anxious when he realized what Collin was doing, so ran to church to tell their mother causing the whole family to run home in panic. None of the family was prepared for what they saw. Collin had prepared a meal of Chicken, rice and peas with West Indian vegetables, a culinary delight far beyond the capabilities of many adults let alone eight year olds! “I’ll never forget the look on my mothers face” reminisces Collin. From that day onwards he became the family cook.

Collin went on to study Food and Nutrition in school and was top of the class. Later he took a work placement at ‘La Roose’, which was the top seafood restaurant in the country, and here he applied skill to his raw talent. Was the restaurant that made Collin, who was cooking main courses for the dignitaries and stars that attended the high-end eatery, at the aged of 15. From here Chef Collin was sent to the Cayman Islands to a fine dining restaurant where he perfected his cooking skills and learnt how to present food properly. But Collin was not satisfied, and decided to relocate to Europe, fully aware that this was the centre of the world’s Food industry. In 1997 Chef Collin Brown moved to London.

The move was far from smooth and fraught with obstacles. A less ambitious individual would have quickly returned home to where his expertise was respected and his name well know, but Chef Collin is made of stronger stuff. “Securing employment in a fine dining restaurant is almost impossible if you do not specialise in French cuisine, and my Caribbean background proved problematic” Said Collin. Having been told his qualifications were invalid as he’d studied outside of Europe, Collin had no choice but to start from scratch.

Collin’s cakes were infamous across the island back in Jamaica, even his Food and Nutrition teacher had begged (to no avail) for the recipe. Collin began to make this cake in a bread size tin and sold it in Dalston, Hackney which is the only place he could afford to live when he first moved to London. It was an instant hit. He was soon making £1000 per week on cake alone and receiving mass requests for wedding cakes. The business grew rapidly, and Collin found himself living in a single room with one bed and a cooker catering for 200 people. Collin worked relentlessly, at times having to wrap his bed in plastic and put it outside so he had enough room to cook from 3 am, ready for 6 pm.

He worked his way up from selling cakes on the street to being asked by Virgin Atlantic to handle catering for all transatlantic flights to the Caribbean. He went from renting venue space in south London for his catering to owning a popular restaurant in a desirable London location. Collin’s vision is to become the first UK based chef to achieve a Michelin star for a Caribbean restaurant, and with his focus, determination and huge smattering of talent, its more a case of when, not if.
